Excellent food and very reasonably priced. The salsa is sassy and the chimichanga was excellent. All of our food was fresh and hot. I will come back again.

Colorado is not at a loss for good Mexican food. But when you travel to a small town, you usually don't expect too much in the way of authentic types of food. I was pleasantly surprised by El Caporal. I ordered the Chile Colorado, which in my opinion is one good test of a true Mexican restaurant. El Caporal did not disappoint. The Chile Colorado had all the right ingredients with a little lime juice in it to boot. My son had a tostada with ground beef that he thought was good. My wife ordered the New York Steak Ranchero, which she was not overly impressed with, and that's the only reason why El Caporal didn't get five stars. But service was speedy, and the place was jumping, which is always a good sign. Overall, you can do worse in Canon City for Mexican food than El Caporal.

Average at best. I've definitely had better, but I am from Texas so my standards are a little high. Chips and salsa were good and so were the sopapillas! My meal was the chicken burrito, and there was chicken bone in one of my bites. My boyfriend found hair in his dish, which wasn't pleasant. The staff were pleasant, quick, and polite.

Always good service and the food is consistently good. Love going there with my Hometown Girls. There are usually 20 of us but no problem for the servers.

Vegetarians beware! Even the rice is made with chicken broth, so there is very little you can eat. The waiter unapologetically suggested that I have the veggie burrito, but with no rice or burrito sauce. I had it, because that was the only reasonable option, but at least some sort of accommodation would have been nice (salsa, guacamole, anything). The other food seemed to be pretty good, according to the rest of the table.

Quite good! I'm from the NE so I've had lots of variety in Mexican foods and my fiancé from southeast Texas would both consider this more of a tex-mex restaurant. Food and service was fast and delightful! Strawberry margarita was good just smaller than most other places but no big deal. I had the chicken and shrimp fajitas and he had the crab enchiladas and both were yummy! Their guacamole is to die for! We will certainly go back!

Gross. The food came out so fast that it could have only been slapped on the plate and microwaved (I had the Carne Asada dinner) Margarita was drinkable and salsa decent, however I would NOT go back.

I'm wavering between 4 and 5 stars here. I'm going with a 4 because everything was good and solid, but it was not outstanding. The salsa was awesome! It tasted home made and came with warm chips - nice touch. I asked for recommendations from our waiter and ended up with some mushroom chicken dish in a cream sauce. My husband had a beef mushroom something in a red sauce, we wanted something other than a taco or an enchilada :) Both were really good. I also had a margarita and we split the flan. All very good. Service was good too. I would go back and definitely recommend this place.

Food was certainly editable but not great. Chips were warm and fresh, but salsa tasted jarred. Lunch specials made the meal affordable. PS I added green chili to my burrito (wet style) but it wasn't good chili at all :( Service was great though!

If you're in Canon City and have a taste for Mexican you can't go wrong with El Caporal. Don't let the outside fool you. Place is clean and food is very good. Joe J. said the chips tasted like they came out of a bag and he is spot on. I can go through two baskets of chips myself with some good salsa but not here. GET BETTER CHIPS and I'll add a star.

I had the enchiladas suizas and my husband had a burrito. The food came out fast, hot and certainly good enough. I've had better and I've definitely had worse. The beans were fair and the rice was just ok. The service was great. If I'm in the area again, I will return to El Caporal. While the food didn't blow my mind, it was definitely tasty enough, and I'd like to try the other things they have to offer. Curiously, our local friends also said that it was the only good place to eat in town --- so keep that in mind.

The service here was great, I had a kiwi margarita which was great I also had their chicken chimichanga which had really great flavor! They are a family friendly restaurant, no coloring menus though which was fine because the food came out super fast!

The service was fast and the food was great. We went there around lunch time, and 4 adult meals was ~$29 and we were all stuffed. I would come again :)

During the holidays Sir Nicholas and I spent a couple of days in his hometown of Canon. I thought we had perhaps explored all the hidden gems this rather small place had to offer but I was quite incorrect. Turns out there are a plethora of places still waiting to be a FTR (first to review) and El Caporal is just but one. Nick's parents and the two of us ate Christmas Eve lunch here and I really enjoyed it. We started with chips and salsa and the salsa was actually fairly spicy. It was also the way I like salsa, which is not full of onions, tomatoes and other things. I like it to be more of a sauce and less of a stew. I also had a margarita that went down excellently. For dinner I chose something safe and went for fajitas. This could easily be one of my guilty pleasures for as much as I love straight tacos I find a lot of happiness in building my own anything. And what else are fajitas if not build your own tacos? The coolest thing about this place is that they had pork fajitas served with corn tortillas. So, that's what I ordered. It was actually really delicious. Normally I make Nick take me to the Owl when I'm in Canon because it's my favorite, but El Caporal just may end up giving them a run for their money, or for our money I guess.

Service was extremely fast. Combination 19 was delicious. They have some of the best salsa around. I'll be back!

I was down in Canon City this past weekend for a rafting trip. Our guide was a townie and said we should go here for the best Mexican in town. He even said they had the best bus boy in town..he wasn't kidding. That dude had our glasses filled with water the entire meal. Their green chile is amazing!!! And a little spicy, just the way I like it. I had chicken enchiladas with green chile on top. Their chips and salsa are also delicious. The chips are on the thin side (my favorite) and salsa a tad spicy and more pureed, which is good since I hate tomato chunks. They don't skrimp on portions and it's fairly decent priced. Definitely a go- to mexijoint in Canon City for sure.

Fantastic Mexican. Pollo Asado was great, and cooked in a different style from which I'm used to on the east coast. Would love to come back again if I make my way to Colorado some time in the future.

It's always a good sign when a bowl of warm tortilla chips and good salsa arrive at your table within seconds of being seated. The rest of our meal was equally delightful. I had the Pork Adobado and my husband had the Enchiladas. Both were excellent. My pork was tender and very flavorful, and my husband cleaned his plate. Our original-on-the-rocks and Peach margaritas (all offered in large and larger - also great!) were awesome, as well. Even the interior design was well done. They've done a great job of taking an plain, old building and giving it an authentic feel on the interior. A great find in a small town!

Server had no personality. Food was served hot and fast. Good meal. Stopped here while traveling through Canyon City. Rating is because of wait staff. If you want a good hot and fast meal this does the trick.

Great restaurant. Service and food was good. Tortillas were warm serve with fresh salsa. I had the Chicken Taco al Carbon with rice and beans, everything was fresh and home made. For dessert Churro, crunchy, warm and not greasy.

We stopped by on our way to royal gorge bridge park. Honestly was not expecting much in a small city like canon city. but it did leave us pleasantly surprized. Was treated with very tasty salsa and chips. Food was delicious and piping hot and corn tortillas were amazing. Service was very fast and friendly. Loved it. and would recommend it to anyone looking for nice local mexican flavor.

It seems to be some time since a review was posted for this location. Past were pretty good but things must have fallen down. Would not recommend this restaurant. Did lunch. Chips and salsa were delivered immediately. Unfortunately the chips are a poor quality. Looked and tasted like they came out of a plastic bag delivered to the restaurant by Sysco. The salsa gives no impression of being "homemade" rather just poured out of a bottle. Our main items were the beef Quesadilla and the lunch special, a beef Chimichanga. Again, nothing special. The beef in the Chimichanga was stringy and tough and had the taste of pot roast. Nothing flavorful at all. Both the rice and refried beans were bland. Overall service was not exceptional. Our ice teas arrived after our meals had been delivered to the table. When the waiter and the cashier asked how our meals were, and we gave an honest opinion, they both looked shocked that someone would say we were not satisfied.

3.5 Stars! Their chips and salsa are very good. We were down to the last chip and someone came by to replenish our chips and salsa - great service. I had the camarones a la diabla and my bf had the chimichanga. The main course was just ok. But for mexican food in canon, I would say it's about as good as it gets. I would come back to try other dishes.

Clean, great service and good quality ingredients! Burrito was slathered in cheese but otherwise pretty healthy. Best chips and salsa ever!

When my husband and I visit family in Canon City, we like to take them here for dinner. The staff is very friendly and accommodating. Every meal I've had here has been pretty good. The blackberry margaritas are fantastic and I haven't found a place which makes them as well as El Caporal. I can't wait to come back!

We passed through Canon City yesterday and I was craving Mexican so we gave this restaurant a shot. After reading the reviews this seemed to be the best of the Mexican places in town. The reviewers may not have much to compare to, but this was NOT good Mexican food for a number of reasons. Like a couple other yelpers have said, the chips are very bland. Flavorless in fact. The didn't even have the salt you normally get with bagged chips. The salsa was edible, but nothing to write home about. Both of these things are good, however when you read the menu and see that an additional basket of chips is $1 and extra salsa is $0.75. I ordered the special which came with a ground beef taco, an enchilada (I got cheese) and a bean tostada. Rice and beans were also included. My husband got the chorizo burrito. The food arrived hot in a reasonable amount of time and the waiter and busser were both friendly and efficient. The tux pants, white shirt and cumberbun make you hopeful that the food will be good, but they spend more on uniforms than on food. I ate the taco first. It was okay. Then on to the tostada. The corn tortilla, like the chips, was flavorless. It was also a funny texture, not crunchy like a tostada should be. When I came to the cheese enchilada I found that was not even up to par. There was no sauce and I didn't finish it. I tried the beans and the rice separately. They too were devoid of flavor. I tried mixing them together, but all that did was make the crunchiness of the undercooked rice stand out that much more. I left the rest of it on the plate. The chorizo burrito was a good size, but one of the worst my husband has ever had. It was not served with rice and beans, not that he would have wanted them anyway. After the meal I went to use the bathroom while hubby paid the bill. Let's just say if I had seen the bathroom first we would have left without eating. One other reviewer said to ignore the outside, it was dark so we did not see it. Unfortunately the bathroom cannot be ignored The bathroom mirrored the food, sloppy, bland and not well prepared. The paint is chipping off the door. Once inside I entered the first stall where I immediately noticed the toilet was filthy, not water stains, I can deal with that. The toilet bowl had not been cleaned in quite a while. The ceiling had water stains that as you followed them with your eye turned into mildew on the wall and mold spots that rotted a hole in the wall the size of a grapefruit. Most convenience store bathrooms are in better shape. Got back to the table and discovered our bill was only $21. I guess that was a plus. We left and both decided we would not eat there again.

I enjoyed the zestiness in the salsa and the cheese Enchiladas. I went with friends from California and they all agreed it's great.

It's probably true that I loved and inhaled the food here because I had just finished a full-day rafting trip on the Arkansas River. I'm not sure I've ever been so ravenous. That day, those were some of the tastiest chicken tacos and cheese enchiladas I'd had in a long time. Honestly I wished I had two mouths so I could eat them faster. The chips and margaritas were super salty as I prefer them and the salsa packed a mild punch...and was full of cilantro, my favorite! The service was fast and friendly, the booths large and comfy and the bathrooms spotless. I'll definitely be back to Canon City for another rafting trip and this will be my first pick for the meal afterward.

We go here quite often. Excellent food, excellent service. Good prices. I've had many dishes from El Caporal, and all of them have been delicious. Fajitas are fantastic, and my fiance loves the tortilla soup.

This is in my home town. I live in Denver now and have searched for years to find something that resembles the El Colorado Burrito. Slow roasted beef in a robust red sauce and cheese. It sounds simple but its complex and delicious. I try and eat there at least once when I am home. I miss you El Caporal!

The food's typical except for the rice. I really don't like regular Mexican rice with the tomato flavor. El Cap's rice beats everybody else's.

Pros: Great Mexican cuisine. Fast service (sneaky fast ;) Cons: Little pricey ($12 for 1 plate, depending on what you get) This is my favorite Mexican place to go to when we want GOOD food! Way better than other local places.

Ate here on recommendation of a guide at Raft Masters, and wasn't disappointed. Delicious salsa and warm chips. The scallops with rice was very good, and the wait staff is attentive. What more could you want?

I had high hopes and was not disappointed. I asked that my vegetable fajitas be prepared with jalapeño peppers. They came out as requested. The rest of the family was satisfied with their orders as well. If I ever venture through Canon City again, I will make it a point to stop.

Mexican Cuisine

If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.

Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.
